Happy Easter Everyone!
Just because we can't be home to spend Easter with our loved ones, doesn't mean we can't enjoy the tastes of home! We had a small crab/shrimp boil ourselves Saturday evening with some of Jason's co-workers. Jason and I were planning to boil some shrimp when a few of his co-workers called with a better invitation: boiled crabs (my favorite). They had picked up some Sri Lankan mud crabs from the wet market in Little India, and so we had the best of both world--boiled shrimp and crabs, along with corn and potatoes. This was one of the best meals we have had yet in Singapore--those Louisiana-seasoned mud crabs could easily give the Singapore black pepper and chili crabs a run for their money! (We might be on to something...ha!) Needless to say, no one left hungry and plans are already in the works to have these seafood boils more often. (Jason has already requested more crab boil seasoning from his friend Eric, who is arriving in Singapore on Tuesday.)
After Mass this morning, Jason and I lunch at one of our favorite restaurants and then had a low key afternoon (Jason is busy working as I compose this entry). Jason is still trying to catch up on work from our time away in New Zealand and I am still trying to play catch up on laundry and a few blog posts too.
We hope that everyone has a most blessed Easter Sunday!

Mud crabs are imported from Sri Lanka

The claws were so big that a pair of nutcrackers would not do the trick!

Good thing the crabs were cleaned and broken apart at the wet market because I don't think they would have fit into the stove-top pot.

The guys did a wonderful job with the seasoning--all to perfection!
